INGREDIENTS:
• 1/2 cup cooked Quinoa
• 2 ripe bananas, mashed
• 2 Tbsp coconut oil, melted
• 2 Tbsp coconut sugar
• 1 Tbsp lemon juice
• 2 pastured eggs, well beaten
• 1 cup oat flour
• 1/2 tsp Baking Soda
• 1/2 tsp Sea Salt
• 1/2 tsp Cinnamon
• 1/4 tsp Nutmeg
• 1/2 cup coconut milk
• 1/2 C chopped walnuts

DIRECTIONS:
1. Put all ingredients in large bowl and stir gently (Do not over stir or mixture will be tough).
2. Place a large pan over medium heat and add in coconut oil. Add 1/4 cup of the batter to pan.
3. Cook pancakes about three minutes on the first side and about one minute on other side or until cooked through.
